Fun Friday - Food Transformations



This week the Blogging for Fun group's Fun Friday topic is Transformation. The assignment was to talk about your favorite food and transform it into something healthy.

My favorite food is Fettuccine Alfredo. But I don't want just any recipe. I am spoiled by my husband when he cooks it for me and his recipe is the best (We joke that it is the reason I married him). I really couldn't even start to explain how he makes it. He has a real technique which involves the layering of flavor by adding the Parmesan, salt and pepper at different stages, and using egg yolks as the thickener. I don't know what kind of calories his recipe has, but I am sure there are probably a gazillion!



So, I searched around the Internet for a light version of Fettuccine Alfredo. A lot of them did not sound very appetizing to me. Especially since they used things like cottage cheese (yuk!!!) But I think I found one that I could probably work with and did not sound too far off from what I am use too.

Fettuccine Alfredo Low Calorie Recipe

Ingredients:
8 ounces fettuccine
1 tablespoon unsalted butter
1 tablespoon flour
1/4 cup skim milk
1/2 cup Parmigiano-Reggiano cheese, grated
1 tablespoon fresh lemon juice
1/4 teaspoon nutmeg

Directions:
Cook the fettuccine according to package directions. Drain but reserve 1/4 cup water. Keep the noodles warm.

In a skillet, melt the butter. Add the flour and cook until it becomes straw colored about 45 seconds. Remove from the heat and whisk in the milk. Return to the stove and on medium heat continue whisking constantly about 2 minutes, or until thickened. Add the reserved water and the remaining ingredients. Stir until smooth.

Pour over the noodles and serve.

Recipe makes 4 servings.

Total Fat: 3.7g
Cholesterol 49mg
Sodium: 267mg
Total Carbohydrates: 39g
Fiber: 2g


So for me I am not sure why you would put lemon juice in this and I would probably try leaving it out. Also we do not use nutmeg, so I would have to replace it with salt and pepper. As far as the skim milk, well I would just have to hope it taste like half and half.

Top Ten Entrecard Droppers for May


Seems like I am a few days late. Unfortunately, my computer went haywire last Friday. First my monitor went blank. Went out Saturday to buy a new one and came home to the news that Windows was corrupt. Decided to reformat the whole thing. Takes a while to get everything back on, but I love that it now feels like a new computer. Much faster. So, here are my top ten Entrecard droppers for May. Fun Friday - The Year I was Born


The topic this week for Blogging for Fun's "Fun Friday" was to look up the year you were born and find out how much the following things cost that year. Stamp, gallon of milk, a new home, a new car, and a gallon of gas. As an add on we could see what was the number one song and movie the week we were born.

I was born in the year 1959. (No snickering please!)

I thought this was a fun little task and very interesting to find out how much cheaper things seemed to be. But when you see that the average household income was $5010 in 1959, maybe things weren't really that much cheaper.

Stamps were 4 cents.

A gallon of milk was $1.01

A new home was $12,500

A new car was $2200

Gas was 25 cents a gallon

Some other interesting prices are a movie ticket $1.00, loaf of bread 20 cents, T-bone steak: $1.09 lb., Nestles Quick 1 lb can at 39 cents, hamburger meat 89 cents for 3 pounds, and peanut butter 29 cents a jar.

The number one hit song on the day I was born was "Mack the Knife" by Bobby Darin.
The only thing I could find for movie hit was that Ben Hur won the Oscar for best movie.

A few other interesting facts about 1959 is that the United States President was Dwight D. Eisenhower. NASA introduced America's first astronauts to the world including John H. Glenn Jr, and Alan Shepard Jr. Alaska becomes the 49th State of the United States. Hawaii becomes the 50th State of the United States. Fidel Castro comes to power in Cuba after Revolution with the first communist state in the west. An International agreement is signed to preserve Antarctica. The spiritual leader of Tibet, the Dalai Lama flees Tibet and obtains political asylum in India. The first known human with HIV dies in Congo.

My most favorite thing about 1959 is that it was when the first Barbie doll was introduced. I loved Barbie and spent many hours playing with her. (That reminds me that I still have some of my original Barbie dolls and clothes. I will have to pull them out one day and share my collection). In honor of Barbie and the year I was born, here is the first Barbie commercial from 1959.



So that is my research for this week. I swear Melissa, our group leader is a born teacher. She loves to give homework.
